Spaghetti Squash Au Gratin
Seriously one of the most delicious things I’ve pulled out of my oven. Oh, and it’s uber easy! You might hoard it like I wanted to. Make it. Do it now. (Great for Paleos!)

Pesto Chicken Burgers
Seriously delectable, and a HUGE hit with the boys in the house. Also simple. We’ve also nixed the bun.(You can also use ground turkey or beef with no issues.)

Spicy Tuscan Soup
One edit to this, scratch the chicken boullion it calls for, and substitute chicken stock for the water. So easy, so yummy!
