Confession: My family doesn’t care for Thanksgiving dressing.
I know, I know, I can hardly believe it myself. I mean, who ARE these people? It’s ok, because they DO like rice pilaf. So, last year, for the first time ever, I did.not.make.dressing. I made this pilaf instead. I’m still shocked myself.
We survived, and it’s going to happen again this year. This pilaf is a star, and it’s also multi-functional, as it morphs into a wonderful addition to the turkey soup we are bound to have the weekend after Thanksgiving. This pilaf, any leftover gravy, turkey bits, leftover veggies (from the veggie tray no one really eats) and some stock. DONE.
So, give this a whirl this year. It’s simple to make, requires little hands-on time, oh and it’s super yummy too. This will be important to remember as I not only show you how to make it, but also do a dance or two. I know. I’m sorry. Just hang in there.
